no-bake nutella mousse pie

Living in a third world country for a month really made me realize how good we have it here in America.  Towards the end of the four weeks of my trip, I was really looking forward to coming back to some of the simple, yet ‘luxurious’ things I take for granted:

1. Not having to think twice about flushing toilet paper down the toilet.
2. Being able to walk outside, get in my car, and drive wherever I want. 
3. Not having to use warm, powdered milk for my cereal every morning.
4. Dessert.  

Seriously, my sweet tooth was freaking out.  There were nights I would have done bad things for a rich chocolate brownie or chewy chocolate chip cookie.  Sad, but true.  Now that I’m home, dessert is back on the menu!  

I saw this pie while browsing the internet one night during my month away, and knew it had to be made as soon as I returned.  How could one NOT drool over the combination of peanut butter cookies and Nutella mousse?  This pie is a winner in every aspect: it’s easy to whip up, takes less than 10 minutes to make, is rich and creamy, and did I mention it has Nutella?!  Seriously, make this tonight.  

No-Bake Nutella Mousse Pie

for the crust:
24 Nutter Butter Cookies
4 tbsp unsalted butter, melted


for Nutella mousse filling:
2 (8 oz) packages cream cheese, softened
3/4 cup sugar
1 tsp pure vanilla extract
1/2 cup Nutella
1/2 cup whipping cream


for Nutella ganache:
1/4 cup Nutella
1/4 cup whipping cream


Directions:


Place Nutter Butter cookies in food processor and pulse until finely chopped.  Add melted butter and pulse until evenly mixed with cookies.  Press mixture into 9-inch pie dish.  Put in refrigerator to chill.


To make the filling, beat the cream cheese and sugar together with an electric mixer until well blended.  Add vanilla and Nutella and mix until combined.  Last, add cream and beat for three minutes.  Pour mixture into pie crust evenly and refrigerate until set, at least 2 hours.


Before serving, make the Nutella ganache by microwaving the Nutella and cream for 30 seconds, or until a thin sauce forms.  Drizzle over pie.  Cut into slices, and enjoy!
