saltine toffee


After 1,800 miles, 3 days, 2 snow storms, and multiple bathroom breaks, Marc and I finally made it back to the Midwest from Seattle.  As much as I'm going to miss Seattle, I sure am glad to be home.  After 5 months away from home, I was really ready for some time with my family and what a better time than Christmas?  Not only was I excited to see my family, but also excited for the comfort of Christmas traditions: Christmas Eve at Grandma's, beef tenderloin and crab legs for Christmas dinner, white elephant gift exchange, and baking lots and lots of goodies.  One thing that always makes an appearance among the sweet treats is this saltine toffee.   

If you're looking for a quick and last minute treat to bring to a holiday party or gathering, this is your recipe.  It takes a matter of 15 minutes to prepare from start to end, then finishes up chilling in the fridge for a couple of hours.  And let's be honest, you need those extra hours to finish up some last minute shopping done.  The end result is a sweet, salty, chewy, crunchy, and insanely delicious holiday treat.  

Saltine Toffee

40 saltines
1 cup (2 sticks) unsalted butter
1 cup brown sugar
2 cups semi-sweet chocolate chips
3/4 cup chopped walnuts, toasted

Directions:

Preheat oven to 400 degrees F.  

Line a baking sheet with foil, then place saltines in single layer on foil.  

Melt butter and sugar in medium pot over medium heat.  Boil for 3 minutes.  Pour over saltines.  

Bake in preheated oven for 5 minutes.  Immediately out of oven, evenly sprinkle chocolate chips on top. Let sit for 5 minutes, then spread to smooth with a knife.  Sprinkle with walnuts.  

Let chill in refrigerator for at least 2 hours.  Remove from fridge and cut or break into pieces.

Sounds yummy!! We make something very similar except we add toffee bit on top:) ADDICTING!!!

Wow what a fun recipe using saltines!! The hardest thing for me will be waiting 2 hours for it to chill haha. Happy holidays!

My roommate in college used to make this! It's so easy and so delicious! No one ever believes its just saltines :) Happy to hear you're spending the holidays at home- I hope you have a very merry Christmas!

I just made these using Keebler Club Crackers. They took very little time to make and are delicious!

this looks delicious- did you have a hard time making sure it didnt crumble?

Claire - I set them out for about 15 minutes after they were in the fridge so they wouldn't crumble as much. Even if they do crumble, they are just as delicious and just look a little more "rustic" :)
