merry mondays: fudge

Happy Merry Monday!  Christmas is less than a week away, so I'm sure you are all up to your ears in Christmas goodies.  What is a more Christmas-y treat than this weeks Merry Monday theme: fudge?!  
I made a traditional fudge recipe and added marshmallows and peanuts for a Rocky Road fudge.  It turned out like I always dream of fudge to be: rich and silky.  The salty peanuts and fluffy marshmallows made the fudge much more fun (and more tasty!) to eat.  This is another great treat to add to the Christmas dessert tray.  If you have a great fudge recipe, whether its a traditional fudge recipe, or fudge brownies, fudge sauce, or anything decadently chocolate, please join us in Merry Mondays and add it to the link below!  
Rocky Road Fudge

2 cups semi-sweet chocolate chips
1 (14 oz) can sweetened condensed milk
1 cup mini marshmallows
1 cup salted peanuts

Directions:

Line 8 inch pan with foil.  Spray with cooking spray.  

In medium saucepan, melt chocolate chips and condensed milk over low heat.  Stir until smooth, then remove from heat.  Add marshmallows and peanuts and stir to combine.  

Pour into prepared pan and cool in refrigerator 2 hours, or until firm.  Lift from pan and remove from foil.  Cut into squares and enjoy!
