butterfinger blondies

I’M FREEEE!!!  After a couple of crazy weeks filled with group projects, final exams, presentations, and a practical exam, I am done with my final semester of PT school.  Granted, I still have 9 months of clinical rotations but still….no. more. class!  EVER!   Ohhh it’s such a good feeling to be done, but at the same time it’s very bittersweet.  You see, it’s going to be 9 months until all of my classmates are back together again.  While I’m going to Seattle, I have friends going to Illinois, Nebraska, Connecticut, Colorado, and Oregon!  We promised we would keep in touch with Wine Skypes and I promised I would be sending them baked goods.  Obviously.  
So, last week during the midst of the craziness of studying for our exams, working on group projects, and practicing for our practical, I had the itch to bake.  Since I was trying to clean out my kitchen, I hadn’t gone to the grocery store that week and I was out of butter (gasp!).  But, like any addict, I plotted out my chance to make a stop at the store, pick up some butter, and whip together some treats.  Bars are always the way to go when trying to make something quick so I decided on a basic blondie with something fun added in…Butterfingers!  The blondie turned out dense and chewy and the chopped up Butterfinger went perfectly in it, as it added its crunch and butteriness to the bar.  Sugar and butter: the perfect solution to a week of stress.  

Butterfinger Blondies

2 1/4 cups all purpose flour
1 tsp baking powder
1/4 tsp salt
3/4 cup (1 1/2 sticks) unsalted butter, at room temperature
2 1/4 cups brown sugar (I used 2 cups because thats all I had)
3 large eggs
1 1/2 tsp vanilla extract
10-12 fun sized Butterfingers, roughly chopped (or 4 regular sized Butterfinger bars)

Directions:

Preheat oven to 350 degrees F.  Grease and flour 9×13″ baking dish.

In medium bowl, mix together flour, baking powder, and salt.  Set aside.

In large bowl, cream together butter and brown sugar until light and creamy.  Add the eggs, one at a time and mix each one until smooth.  Add vanilla and mix to combine.  

Add the flour mixture to the butter and sugar mixture, and mix until well combined.  Stir in 1 cup of chopped Butterfinger.  (the rest will go on top)

Pour batter into prepared pan, and spread so it is even.  Sprinkle with remaining Butterfinger.  

Bake 30-35 minutes.  Cool completely before cutting into bars.
