white chocolate cranberry orange blondies

Whew…that’s a mouthful!  I really wish there was a more elegant name for these because these blondies deserve a good name…

Have you ever made blondies?  They are so fun to create!  You really can add anything you want to them, as they are essentially just a brownie type of a bar made with brown sugar instead of chocolate.  I stumbled upon this recipe from this website and loved the fruity approach to blondies.  They turned out nothing short of amazing and received two thumbs up from all of my friends who tried them.  Even Marc, who prefers chocolate over fruity desserts gave them his approval.

Another great thing about these is they can be made without an electric mixer.  Since the butter is melted, you just need a whisk and spatula.  These would also be great with the addition of nuts…maybe some chopped pistachios or toasted pecans.

White Chocolate Cranberry Orange Blondies

1 1/2 cups all purpose flour
1 tsp baking powder
1 tsp salt
1/2 tsp cinnamon
1/2 tsp freshly grated nutmeg
12 tbsp (1 1/2 sticks) unsalted butter, melted and cooled
1 1/2 cups brown sugar (light or dark…I used light)
2 large eggs, lightly beaten
1 tbsp vanilla
zest of one large orange
1 cup white chocolate chips or white chocolate bar cut into chunks
2/3 cup sweetened dried cranberries

Preheat oven to 350 degrees F.  Line a 9×13 inch pan with parchment paper or aluminum foil sprayed with baking spray.  This lining will make removing the blondies easier.

Directions: 
In large bowl whisk together flour, baking powder, salt, cinnamon, and nutmeg.  Set aside.

Whisk melted and cooled butter with brown sugar until smooth.  Add beaten eggs, vanilla, and orange zest.  Pour wet ingredients into dry ingredient and combine gently.  Lastly, mix in white chocolate and cranberries.

Scrape batter into the prepared pan and bake 30-32 minutes, until top is shiny and golden brown.  A toothpick should come out clean with a few crumbs attached.  Let them cool completely, remove them from pan, cut and enjoy!

    Funny. I have been on a Blonde kick recently. My recipe is similar in the way it is mixed but is a “little” healthier. 3/4 c whole wheat flour, 1/4 cup white flour, 1/2 tsp baking powder, 1/8 t baking soda, 1/3 c butter or marg., 1 egg, 1 tsp vanilla. All else is the same as your recipe including the making process. 350 for 18-20 min. Delish.
